Because it comes from the [phrase] mh\ e(/n ei)=nai ["not being one"].
But nastos as a masculine [is] a flatcake, or hot bread [made] with olive-oil. Aristophanes in Wealth [writes]: "for a well-baked flatcake used to come to you".[2]
And such [is] nasto/s with oxytone accent; its base-form [is] na/sasqai in the Odyssey.[3] However, *na/stos [pronounced] with barytone accent [sc. with no accent on the final syllable] [is] a city of Thrace, also called Nestos.[4]

There are numerous alternatives, however.
